Chandon Brut Charmat
FRESH, FRUITY, CREAMY, ELEGANT, AND BALANCED
Chandon Extra Brut is the great classic of Chandon.
The best Chardonnay and Pinot Noir grapes come from our El Yaima and Caicayén estates (Uco Valley) located between 1000 and 1200 meters above sea level. With their sandy loam to silty soils and marked presence of limestone, they allow the creation of a sparkling wine that is fresh, fruity, elegant, creamy, and balanced.
The Andes mountain range acts as a barrier to the humid winds coming from the Pacific Ocean, which turns Mendoza into a high-altitude desert with a continental climate. The climatic conditions of these terroirs and the large thermal amplitude allow the grapes to ripen slowly while preserving all their natural acidity.
Tasting Notes:
Yellow with slight golden glints.
On the nose, fresh and elegant. It stands out for its finesse , precision and balance.
Key flavours: white peach, lime, jasmine, red berries, pineapple, brioche
Prolonged Charmat Under Slow Fermentation:
Harvesting during the month of February until the end of March. Pressing of the grape to obtain the must.
The must is inoculated with selected yeasts. The first fermentation is carried out in stainless steel tanks, diversifying them according to their origin to obtain the base wine.
In June the Chef de Cave prepares the assemblage, a creation that involves selecting a combination of new base wines while maintaining the personality of the product.
The second fermentation takes place in stainless steel Charmat tanks, where the bubbles of the sparkling wine are born. Then it is kept for six to eight months in contact with yeast.
Expedition liqueur is added and it is bottled. After three months of aging in the bottle, the sparkling wine is ready.
