    Tasting Notes:
    The yellow gold hue is adorned with delicate, soft golden glints. It has a subtle effervescence, benefitting from 9 years aged in our chalk cellars.
     
    On the nose; a delicious fruit intensity with elegant lemony citrus notes and nuts (flaked almonds, Menton lemons).
    There is a long and nuanced sensory development centred around exquisite hints of patisseries (raw butter, Mirabelle plum jelly).
     
    In the mouth a taut and seductive tactile pleasure (citrus zest, seeded white flesh fruit and Breton biscuits).
    The wine offers a persistent finish with a structure defined by the quality of its potential as a great vintage.
     
    Extra Brut Dosage: 4 g/l
     
    Grape Variety:
    65% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne (Mareuil-sur-Aÿ and Aÿ)
    35% Chardonnay from the Côte des Blancs (Avize, Cramant, Le Mesnil-sur-Oger, Oger, Chouilly and Vertus)
     
    Vinification in stainless steel tanks
    Ageing on lees: 40 months

    A vintage which is deeply engrained with a noble character and great distinction. Enjoy wholeheartedly with the best quality fish, carpaccio of scallops and vegetable raviolis.

    Background Information:
    Billecart-Salmon, a medium-size Champagne House in Mareuil-sur-Ay, was founded in 1818 by the original owners Nicolas Francois Billecart and Elisabeth Salmon who combined their names on marriage to create the brand. It is one of the few remaining Champagne houses to remain family owned.
     
    Most of Billecart-Salmon's fruit comes from a small vineyard holding, though this is supplemented with grapes bought in from the Marne Valley and the Montagne de Reims. Meticulous production techniques, from the use of their own cultured yeast to its long, slow, cool fermentation, ensure that the family has 100% control of production.
     
    Billecart-Salmon is renowned for the quality of its delicate Rose, whilst the Brut Reserve (a blend of three vintages) is a beautifully harmonious and balanced wine. All have the ability to age very well.
     
    The Cuvee Nicolas-Francois Billecart 1959 won the title in the Champagne of the Millennium 1999, out of 150 of the finest 20th Century champagnes. A magnum of the winning champagne later sold for £3,300.
