    Billecart-Salmon Cuvee Nicolas Francois Billecart 2002

     
    This exceptional cuvee was created in 1964 as a tribute to the House's founder. It results from the blending of grands crus from the classified Cote des Blancs vineyards (Chardonnay) and the Montagne de Reims (Pinot Noir). Its vinification, partially in traditional oak casks, underpins the generous character of this fine, elegant and rich wine.
     
    A lovely colour of sparkling yellow gold veiled in luminous golden reflections. This scintillating and crystal-like visual perception gives to the effervescence a rising of fine-cut bubbles.
     
    All the richness and subtlety of an aromatic curve enhances the maturity of the delicious fruit. Fine malted notes associated with orchard fruit (white peach, nectarine, Lorraine plum) refined by the purity of the complex mandarin zest aromas.
     
    The balance of a tension controlled by the blossoming of the wine (seeded and stone fruit, citrus fruit, warm madeleine) and embodied by the line of noble resinous flavours (spruce and juniper berries from Houlle). A truly unique and personal character showing real vinosity.
     
    Serving:
    This generous and mineral vintage, characterised by the elegant vinosity of a complex and mature wine, should be served at cellar temperature (11/12°C).
     
    It will expose the flavours of a beautiful creamy, roasted poultry or a delicious slice of milk-fed veal.
        
    Background Information:
    Billecart-Salmon, a medium-size Champagne House in Mareuil-sur-Ay, was founded in 1818 by the original owners Nicolas Francois Billecart and Elisabeth Salmon who combined their names on marriage to create the brand. It is one of the few remaining Champagne houses to remain family owned.
     
    Most of Billecart-Salmon's fruit comes from a small vineyard holding, though this is supplemented with grapes bought in from the Marne Valley and the Montagne de Reims. Meticulous production techniques, from the use of their own cultured yeast to its long, slow, cool fermentation, ensure that the family has 100% control of production.
     
    Billecart-Salmon is renowned for the quality of its delicate Rose, whilst the Brut Reserve (a blend of three vintages) is a beautifully harmonious and balanced wine. All have the ability to age very well.
     
    The Cuvee Nicolas-Francois Billecart 1959 won the title in the Champagne of the Millennium 1999, out of 150 of the finest 20th Century champagnes. A magnum of the winning champagne later sold for £3,300.
