Ayala Rose Champagne
Ayala Rose shows a lovely light cherry core with a delicate copper glint, enhanced by a beautiful necklace of fine and long-lasting bubbles. On the nose, the wine reveals a seductive bouquet of red fruits (strawberries, raspberries, a hint of cassis) enhanced by the freshness and the finesse delivered by the high proportion of Chardonnay.
On the palate, Rose Majeur is vinous and fleshy, with a very nice balance between the relative strength of the tannins and the delicacy of Chardonnay, leading to a very generous finish.
Grape Variety:
Chardonnay (51%), Pinot Noir (30%), Pinot Meunier (10%)and 9% still red wine from Mareuil-sur-Aÿ (Pinot Noir from old vines).
The very high proportion of Chardonnay and the ageing process offer remarkable finesse and elegance to this champagne.
Technical Characteristics:
ABV - 12%
Dosage - 7.50 g/l
Pairing with food:
Ideal served as an aperitif or with appetizers, but it will also be superb with salmon to balance the fat, with roasted lamb, or with a dessert of red fruits.
History:
One of the original 26 Grand Marque Champagne Houses, Ayala has had a noble history since its inception in 1860 when Edmond de Ayala received the magnificent Chateau as the dowry for his wedding. Located in Aÿ, in the heart of the Montagne de Reims vineyards, Ayala naturally focuses on Grand Cru Pinot Noir for its Brut Majeur and its Vintage Brut. Ayala is a "small" house, the artisan of champagne-making.
Review:
"Salmon pink colour. Tight, herby, complex and savoury with a hint of strawberry fruit. Really lovely stuff."
