The Côte aux Enfants comes from a small plot of 2.5 acres, located in the heart of the terroir of Aÿ; one of Champagne’s grands crus. Exceptional for its exposure and quality of its soil, it is exclusively planted with Pinot Noir. This vineyard is specifically cultivated, with a green harvest that reduces the yield down to 8,000 kgs per hectare.
La Côte aux Enfants is produced under the Coteaux Champenois Appellation and is only made in exceptional years. The harvest date is decided carefully at the moment when the grapes reach their optimum maturity.
The production of the 2002 vintage was 4,357 bottles. At the harvest, the grapes are sorted ‘à la clayette’ and the harvest completely de-stemmed. Only made from the ‘jus de goutte’, the wine macerates on its skins for 10 to 12 days. It is then aged for a minimum of two years, in 205 litre oak casks. The barrels used are 3 - 5 years old so the oak influence is subtle in the finished wine.
